Directions
- Bring water to a boil. Add glass noodles and cook until soft, avoiding mushy rinds. Drain and cool in cold water.
- Boil shrimp in boiling water until cooked through. Remove and set aside. Followed by squid and shellfish.
How to make the dressing:
- Combine finely chopped chilies, chilli sauce, lime juice, syrup, fish sauce, and pineapple juice in a mixing bowl. Taste and adjust seasonings to your liking.
- Add the meat, glass noodles, chopped onion, Chinese chives, and spring onions. Toss to combine. Serve on a plate.
- Sprinkle with cashew nuts and serve.
