Chicken Green Curry Spaghetti

Ingredients
green curry broth 100 grams
spaghetti (boiled) 150 grams  (67 grams dry)
chicken, cut into pieces (thighs are more tender)             50               grams  (if using shrimp,  4-5 pieces)
Thai eggplant 5 grams  (1/2 piece)
red chili peppers, sliced 5 grams
basil leaves 5 grams
shredded kaffir lime leaves 1 grams
Parmesan cheese, for garnish    

Directions
  1. Boil the spaghetti : Bring water to a boil with a pinch of salt. once boiling, add the spaghetti. boil until al dente (about 8-10 minutes), then drain. toss with oil and set aside. 
  2. Heat the green curry in a pan. once boiling, add the chicken and eggplant and stir-fry until cooked.
  3. Add the kaffir lime leaves and red chili peppers. continue to stir-fry until the green curry is reduced.
  4. Add the spaghetti and toss to combine.
  5. Add the basil leaves, turn off the heat, and transfer to a plate. sprinkle with cheese and serve.
