Directions
- Boil the spaghetti : Bring water to a boil with a pinch of salt. once boiling, add the spaghetti. boil until al dente (about 8-10 minutes), then drain. toss with oil and set aside.
- Heat the green curry in a pan. once boiling, add the chicken and eggplant and stir-fry until cooked.
- Add the kaffir lime leaves and red chili peppers. continue to stir-fry until the green curry is reduced.
- Add the spaghetti and toss to combine.
- Add the basil leaves, turn off the heat, and transfer to a plate. sprinkle with cheese and serve.
