How to Fry Shrimp
- Pour the crispy flour into a bowl. Gradually add ice cold water and stir to dissolve the flour. Avoid clumping.
- Toss the deveined shrimp in the crispy flour. Then, coat the shrimp in a mixture of flour and cold water, then coat with breadcrumbs. Lightly beat to spread the shrimp.
- Heat oil in a pan and fry over low heat until golden brown. Remove and drain. Set aside.
How to make sweet and sour sauce
- Heat oil in a pan and add finely chopped garlic. Fry until fragrant.
- Add bell peppers and stir-fry. Add Chinese rice wine and stir-fry until the alcohol smell disappears. Add stock and chili sauce.
- Season with oyster sauce, light soy sauce, sugar, and ground pepper.
- Add onion and pineapple, followed by cornstarch dissolved in water. Stir-fry to combine.
