Ingredients
fresh shrimp 5 - 6  
Crispy flour (for coating the shrimp)    
Crispy flour mixed with cold water    
Breadcrumbs    
bell peppers 1/4 cup
onion 1/4 cup
broth 1 cup
pineapple 1/4 cup
sugar 1 1/2 tablespoons
minced garlic 1 tablespoon
Chilli Sauce Mabin Brand 2 - 3 tablespoon
Chinese rice wine 1 teaspoon
Oyster Sauce Mabin Brand 1 tablespoon
light soy sauce 1 tablespoon
A pinch of ground pepper    
Scallions (for garnish)

How to Fry Shrimp
  1. Pour the crispy flour into a bowl. Gradually add ice cold water and stir to dissolve the flour. Avoid clumping.
  2. Toss the deveined shrimp in the crispy flour. Then, coat the shrimp in a mixture of flour and cold water, then coat with breadcrumbs. Lightly beat to spread the shrimp.
  3. Heat oil in a pan and fry over low heat until golden brown. Remove and drain. Set aside.
How to make sweet and sour sauce
  1. Heat oil in a pan and add finely chopped garlic. Fry until fragrant.
  2. Add bell peppers and stir-fry. Add Chinese rice wine and stir-fry until the alcohol smell disappears. Add stock and chili sauce.
  3. Season with oyster sauce, light soy sauce, sugar, and ground pepper.
  4. Add onion and pineapple, followed by cornstarch dissolved in water. Stir-fry to combine.
  5. Pour the sweet and sour sauce over the fried crispy shrimp. Serve with hot steamed rice.
