Mama Tom Yum Shrimp Stir-Fried Noodles with Egg Wraps

Ingredients
cooked instant noodles 1 package
eggs 2  
fresh shrimps 3 - 4  
oyster mushrooms 1 - 2 tablespoons
chopped galangal 1 tablespoons
chopped lemongrass 1 tablespoons
finely chopped chilies 1/2 tablespoons
Chilli Paste Mabin Brand 1 1/2 tablespoons
fish sauce 1/2 - 1 tablespoons
sugar 1 tablespoons
lime juice 1 - 1/2 tablespoons
evaporated milk 2 - 2 1/2 tablespoons
chopped coriander 1/2 - 1 tablespoons
A few shredded kaffir lime leaves  
Chilli Sauce Mabin Brand, as desired ปริมาณตามชอบ

Directions
  1. Heat oil in a pan. Add galangal, lemongrass, and finely chopped chilies and stir-fry until fragrant.
  2. Add shrimp and stir-fry until cooked.
  3. Season with chili paste, evaporated milk, fish sauce, sugar, and lime juice. Taste and adjust the seasoning.
  4. Add cooked instant noodles and mushrooms and stir-fry until cooked. Add finely chopped kaffir lime leaves and coriander. Set aside on a plate.

Egg Wrapping Steps
  1. Crack an egg into a cup and beat until the yolk and white are combined.
  2. Heat a small amount of oil in a frying pan over low heat. Pour the egg into the pan and swirl it around to spread it evenly. When the egg is cooked and begins to separate, turn off the heat and let it cool briefly. Then, place the stir-fried Tom Yum noodles in the center of the pan. Fold the edges of the egg inward on all four sides.
  3. Invert a plate into the pan and flip it over so the wrapped egg is on the plate. Drizzle with Chilli Sauce Mabin Brand. Garnish with fresh shrimp and shredded kaffir lime leaves.
