Crispy Fried Fish with Soybean Sauce
Crispy Fried Fish with Soybean Sauce is a fish dish you shouldn't miss. Ingredients
dory fish 200 grams
corn starch 1/2 cup
minced garlic 1 teaspoon
finely chopped old ginger 1 teaspoon
chopped shallots 1 tablespoon
finely chopped soybean paste 1 teaspoon
Oyster Sauce (Mabin Brand) 1/2 tablespoon
light soy sauce 1/2 tablespoon
Dark soy sauce, a little 1/4 tablespoon
sugar 1/2 tablespoon
stock or water 3 tablespoon
diced bell peppers 1/4 cup
Chinese rice wine 1/2 tablespoon
ground black pepper 1/2 tablespoon
vegetable oil 1 tablespoon
chopped green onions (for garnish)    
palm oil (for frying fish)    

Directions
  1. Coat the fish in corn starch and deep-fry in a hot pan until golden brown and crispy. Remove from heat and set aside.
  2. Heat oil in a pan, add garlic, shallots, minced ginger, and finely chopped soybean paste. Add diced bell peppers and Chinese rice wine. Stir-fry until the alcohol smell disappears. Add the broth.
  3. Season with oyster sauce, light soy sauce, a little dark soy sauce, sugar, and black pepper. Adjust seasoning to taste.
  4. Pour the soy sauce over the crispy fried fish pieces and garnish with chopped green onions.
